It may not feel like it, but it is Memorial Day weekend! Usually we head to the beach to visit with my mom. Then we come back home to kick off the start of summer with friends at our swimming club. I am missing all the loved ones that I usually share this fun weekend with. So in honor of you, I am making a special Strawberry Mint Cocktail and I am toasting to you all! It may not feel like the start of summer, but we all deserve a refreshing and light cocktail this weekend. Cheers all!
3 strawberries, diced
5 mint leaves
Ice
2 oz. Vodka
4 oz. strawberry flavored seltzer water
Muddle the strawberries and mint together with a spoon in a bowl. Add to your cocktail glass. Top the strawberry and mint with vodka, seltzer and ice. Give a good stir and enjoy this refreshing taste of summer!
