Summer Strawberry and Salmon Salad

It is strawberry season and I can't get enough of them these days! As the weather gets warmer, I am craving fresh, cold and seasonal salads.


This salad may be my new favorite!! I love the combination of the crisp, cold spinach and arugula with cashews, feta cheese and strawberries. Those refreshing flavors are they perfect bed for a warm and peppery salmon fillet on top. Then add a drizzle of strawberry vinaigrette on top....trust me, this is one amazing salad! And healthy too! What could be better?!


Summer Strawberry and Salmon Salad

Ingredients:

Salmon fillet

Olive Oil

Montreal Steak Seasoning

Baby Spinach

Arugula

Unsalted Cashews, chopped

Strawberries, diced

Feta Cheese

Strawberry Vinaigrette


  1. Brush olive oil onto each side of the salmon.

  2. Sprinkle both sides of the salmon with Montreal Steak Seasoning. This adds the best garlic and peppery seasoning!

  3. Heat up a tablespoon of olive oil in a nonstick skillet, over medium-high heat.

  4. When they oil is nice and hot, place the seasoned salmon fillet into the skillet.

  5. Cook the salmon for approximately 3 to 5 minutes on each side, depending on how thick your salmon is. (I like a good crispy crust on my salmon so I cooked it 4 to 5 minutes on each side.)

  6. While the salmon is cooking, add your spinach, arugula, cashews, strawberries and feta cheese to a plate. Then drizzle with strawberry vinaigrette (or any vinaigrette will work).

  7. Lastly, place the hot, cooked salmon on top of the salad mixture and enjoy right away!






Just look at all of those healthy flavors! They come together perfectly in this salad. And it pairs great with a nice chilled glass of rosé! I have a feeling that I will be making this salad a lot this summer. It is amazing!
