My childhood friend shared this recipe with me ages ago and it was "love at first bite". It is one recipe that everyone always asks for. It is another great party food because it is so easy to throw together and it makes a TON!! And it's healthy!!! And so delicious!!
1/4 cup vinegar
1/4 cup olive oil
0.7 oz. Packet of Italian dry dressing seasoning
1 package grape tomatoes, quartered
3 green onions, diced
1-2 avocados, diced
1 can black beans, drained and rinsed
1 can corn, drained
2 oz. diced pimentos
1. In a Mason jar, shake together your oil, vinegar and dry Italian seasoning packet.
2. Add the rest of the ingredients to a bowl.
3. Pour the dressing over top and stir until combined.
4. Serve with tortilla chips.
Note: This quarantine pantry is out of black beans. But I have enough kidney beans in there to make 15 batches of chili! So I used kidney beans and the boys still loved it!!
