It’s zucchini season and they are everywhere! I can find them super cheap at my local farm stand and I love all of the different ways that you can cook them!
Have you ever tried eating Zucchini Noodles? If you are trying to eat more veggies or are watching your carbs, Zucchini Noodles are perfect for that! I must admit that I was skeptical at first. But once I tried them, I loved them!
Now I always make Zucchini Noodles instead of pasta when we have marinara, meatballs or bolognese sauce. They would be perfect for Shrimp Scampi too! I bought this spiralizer and it is so easy to make your own Zucchini Noodles at home. Try it!
Zucchini Noodles
Ingredients:
Zucchini (looks for smaller ones that will fit easily into the spiralizer)
Olive oil spray
Garlic powder
Take your zucchini and turn it in the spiralizer just as you would a pencil in a pencil sharpener. Cut occasionally so that your noodles aren't too long.
Pat the zucchini noodles with a paper towel and try to remove as much moisture as possible.
Place zucchini noodles onto a sheet pan lined with parchment paper.
Spray noodles with olive oil spray and sprinkle with garlic powder.
Give the noodles a good toss and spread them out as much as you can. Into a thin layer.
Cook them in the air fryer for 18-20 minutes at 375 degrees, giving them a toss halfway through.
Serve warm with your favorite sauce in place of pasta!
Please note that you can also cook Zucchini Noodles in the air fryer at 375 degrees for about 12 minutes.
