Tomato, Swiss and Dijon Sesame Bagel Melt

When I was in college, there was this amazing bagel shop right at the end of Main Street and next to the Art Department where my studio was. I was a broke college student who couldn't afford to eat out much - but when I did, I would go to this bagel shop for the most amazing bagel melt! I loved how inexpensive it was and how it would fill me up. But most of all, I loved the combination of flavors! It is perfect for this time of the year when the tomatoes are in their peak season! Just one bite takes me back to the happy times spent at the University of Delaware! I love the way that food can bring back the best of memories like this!


Tomato, Swiss and Dijon Sesame Bagel Melt

Ingredients:

Sesame bagel, halved

Dijon mustard

Tomato, sliced

2 to 3 slices of Swiss cheese

Fresh basil, chopped


  1. Place the bagel halves on a cookie sheet with the cut side up.

  2. Spread a layer of Dijon mustard onto the bagel halves.

  3. Place the a slice of tomato on each half and season with salt and pepper.

  4. Place a slice of Swiss cheese on top of each half.

  5. Bake at 375 for 10 to 12 minutes. Until the cheese has melted and the bagel is toasted.

  6. Garnish with fresh basil and eat right away.


Note: If you have an air fryer, you can cook it even faster in there!





Sometimes the simplest meals are the best kind!



They didn't add fresh basil at the bagel shop in Newark, Delaware. But I just got in from gardening and couldn't pass up a chance to top a fresh and local heirloom tomato with fresh basil! This would also be delicious topped with some "Everything" Bagel Seasoning too!
