Turkey, cranberries and pecans! Oh my! I first had this amazing combination of flavors in a turkey salad from my local gourmet market. From the first bite I was hooked and I had to figure out how to make it for myself. It is one of my favorite sandwiches - especially this time of the year. Plus it is a great way to use up leftover turkey. Or even chicken! This turkey salad is delicious on a croissant or on a bed of lettuce or arugula. And it is so much cheaper to make it at home! Especially with as much as my hungry boys eat!
Turkey Salad with Cranberries and Pecans
Ingredients:
2 cups turkey, diced
1 celery stalk, finely diced
1 green onion, diced
1/4 cup dried cranberries
1/4 cup pecans, chopped
3/4 cup mayonnaise
Salt and pepper to taste
Pinch of garlic powder (about 2 to 3 shakes)
Mix all of the ingredients together in a bowl until well combined. Season with salt and pepper. Serve on a croissant, bread or a bed of lettuce or arugula.

I used to serve this delicious turkey salad when I would have my girlfriends over for lunch. They look so elegant when you serve them on mini croissants. Who knew that turkey salad could be so pretty? I miss entertaining so much! Hopefully we will be able to entertain again, one day soon.
