Turkey, cranberries and pecans! Oh my! I first had this amazing combination of flavors from my local gourmet market. From the first bite I was hooked and I had to figure out how to make it for myself.
It's one of my favorite sandwiches - especially this time of the year. Plus it is a great way to use up leftover turkey. This turkey salad is delicious on a croissant or on a bed of lettuce. And it is so much cheaper to make it at home! Especially with as much as my hungry boys eat! You will love this one!
Turkey Salad with Cranberries and Pecans
2 cups turkey, diced
1 celery stalk, finely diced
1 green onion, diced
1/4 cup dried cranberries
1/4 cup pecans, chopped
3/4 cup mayonnaise
Salt and pepper to taste
Pinch of garlic powder (about 2 to 3 shakes)
Mix all of the ingredients together in a bowl until well combined. Season with salt and pepper. Serve on a croissant, bread, cracker or on a bed of lettuce or arugula.
Wasn't this a breeze to make? It is so delicious! And one of my favorite things to make with my Thanksgiving turkey leftovers. I always cook an extra turkey breast just for this recipe!
I love to serve this delicious turkey salad for luncheons or for showers. They look so elegant when you serve them on mini croissants. Who knew that turkey salad could be so pretty?
