I know that I have been joking a lot about the insane prices of eggs lately. I truly never thought that it could ever get this high.
I used to make these as an inexpensive and healthy snack or meal for my boys. Now I make them so that we can stretch our eggs and get the most out of them by adding milk and more healthy ingredients to them. Plus, these are a breeze to make and are so much easier than standing over the stove, making omelettes.
Spring is around the corner and we are all trying to eat healthy. And these Western Omelette Egg Bites make it super easy! A perfect breakfast, lunch or snack!
Western Omelette Egg Bake Cups
Ingredients:
Twelve eggs
1/4 cup milk
Salt and pepper to taste
1 cup diced ham
1 cup cheddar cheese, shredded
1/2 bell pepper, diced
2 green onions, diced
Cooking spray
12 cup muffin tin
Preheat oven to 350 degrees.
Spray your muffin tin with cooking spray.
Layer the ham, peppers and green onion in each muffin cup.
Whisk the eggs, milk, salt and pepper together in a bowl.
Ladle the egg mixture into each cup.
Top with shredded cheese.
Bake for 25-27 minutes, until puffy and golden.
