Western Omelette Egg Bake Cups

Do you still have leftover ham from Easter? Then this is a perfect healthy and easy recipe for you!


Western omelettes are a family favorite here. But it can be exhausting standing over the stove, making omelette after omelette for my family of five. So I started to make them this way and it's the best!


I love this making these for SO many reasons! They are perfect for a quick breakfast, lunch or snack. My boys love to eat them before or after sports. And I love that they are getting a healthy serving of protein and veggies.


These Western Omelette Egg Bites make it super easy to always have something healthy to eat!


Western Omelette Egg Bake Cups

Ingredients:

Ten eggs

1/4 cup milk

Salt and pepper to taste

1 cup diced ham

1 cup cheddar cheese, shredded

1/2 bell pepper, diced

2 green onions, diced

Cooking spray

12 cup muffin tin


  1. Preheat oven to 350 degrees.

  2. Spray your muffin tin with cooking spray.

  3. Layer the ham, peppers and green onion in each muffin cup.

  4. Whisk the eggs, milk, salt and pepper together in a bowl.

  5. Ladle the egg mixture into each cup.

  6. Top with shredded cheese.

  7. Bake for 25-27 minutes, until puffy and golden.

Just look at how puffy and golden they get after baking in the oven!
