White Bean Bruschetta with Basil

August 31, 2022

Labor Day weekend is approaching! This weekend is going to be a super hot one where I live. So this cold White Bean Bruschetta with Basil is the perfect appetizer to make! With just a few, simple ingredients, it literally takes a few minutes to whip together. And it is always the hit of a party! Plus it’s a great way to feed a huge crowd on a budget. I love this one!

White Bean Bruschetta with Basil

Ingredients:

1 (15.5 oz.) can of cannellini beans, drained and rinsed

2 cloves of garlic

3 tbsp olive oil

2 tbsp balsamic vinegar

1/2 to 3/4 tsp red pepper flakes

1/8 tsp kosher salt

2 tbsp fresh basil, chopped

Crostini, baguette slices or crackers

  1. Place the garlic cloves into the food processor and pulse until the garlic is finely minced.

  2. Scrape down the sides of the food processor and add the beans, olive oil, balsamic vinegar, red pepper flakes and salt.

  3. Pulse it a few times until it all comes together and is mixed well. You still want the beans to be in small pieces.

  4. Fold in 1 1/2 tablespoons of fresh basil. Stir until combined.

  5. Spread this onto the Crostini (or baguette slices) and garnish the top with the rest of the fresh basil. Or serve with crackers. All are delicious!

I love the crunch of the crostini with this! Such a fresh and refreshing spread and basil is the perfect way to top it off! I love this one!
