I absolutely love this time of the year - when you can still enjoy all of the garden fresh vegetables! Like I said the other day, this is the sweet spot between summer and fall.
This Zucchini, Tomato and Cheddar Crustless Quiche is one of my favorites. The zucchini and tomatoes are so delicious together. Add some cheddar, and it can't be beat! This simple crustless quiche takes just minutes to put together and it comes out of the oven perfect every time! It makes a great breakfast, lunch or dinner! And it’s so delicious!
I love to make a quiche at the beginning of the week because it makes packing lunch for work so much easier!
Zucchini, Tomato and Cheddar Crustless Quiche
Ingredients:
2 tbsp butter
2 zucchinis, 1/2 inch diced
1 garlic clove, minced
2 1/2 tbsp fresh oregano, chopped
1 tomato, sliced
6 eggs
1/4 cup milk
Salt and pepper to taste
3/4 cup shredded cheddar cheese
Melt the butter in a skillet on medium high heat.
Add the zucchini and cook until it softens.
Add the garlic and oregano and cook for one minute.
Spray a pie pan with cooking spray and layer in the cooked zucchini. Allow the temperature to cool.
Meanwhile, whisk together the eggs, milk, salt and pepper in a bowl.
When the zucchini has cooled down, add a layer of shredded cheese.
Pour the egg mixture over top of the zucchini and cheese.
Top with tomatoes slices and a bit of fresh cracked pepper.
Bake at 350 degrees for about 35 minutes, until golden and puffy.
Simply cook the zucchini, garlic oregano in butter...
Pour into a prepared pie dish...
Add cheddar cheese and pour in your egg and milk mixture over the top...
Top with the tomato slices and bake...
Look at this delicious and golden crustless quiche...
