Here it is!! The 3rd "meal" made from the leftover Spicy Cowboy Chili!! I told you that I would find a way to add corn chips to another meal! I mean honestly, who can resist yummy warm queso with chips! Since there are veggies, beans and meat in this queso, I made a salad and called it dinner!! Because why not? Right?! We need some quarantine treats!
Chili Con Queso Recipe
Ingredients:
1 tsp olive oil
1/2 onion, diced
1 clove garlic, minced
1/4 cup jarred pepper rings or jalapeño peppers, drained and diced
1 can diced tomatoes with green chilies
16 oz. Velveeta cheese, diced in 1 inch cubes
6 shakes of Paprika
6 shakes of Cumin
6 shakes of chili powder
1 to 1 1/2 cups leftover Spicy Cowboy Chili
Heat oil in a skillet over medium heat. Add onion and cook until translucent.
Add garlic and cook for 1 minute.
Add the tomatoes and peppers and stir.
Add the cheese and stir until melted.
Add the paprika, cumin and chili powder. Stir.
Once all of the ingredients are melted and combined, add the leftover chili and stir until heated through.
Serve warm with tortilla chips! And don't forget a salad if you want to call this dinner!

Sometimes I wish that it was acceptable to eat queso with a spoon because I love it so much! The tortilla chips are a perfect spoon! Be sure to make this for your next party because everyone loves queso!
