Since it is Lent and more of us are eating fish on Fridays, I thought that I would share one of my family's favorite fish recipes with you - Baked Lemon Breaded Flounder.
It's delicious! We love flounder. It is our favorite fish to eat as it is so light and mild. I always keep wild frozen flounder fillets in my freezer. This is the perfect meal to make when you are short on time because it defrosts and cooks so fast. And it is so light and healthy! Even those who aren't huge fish fans will love this recipe!
Baked Lemon Breaded Flounder
6 flounder fillets
2 eggs, beaten
2 cups breadcrumbs
Olive oil cooking spray
1/4 cup parsley, chopped
Preheat the oven to 350 degrees.
Pat the flounder fillets dry with a paper towel.
Season both sides of the fillets lightly with salt, pepper and garlic powder.
Put the beaten eggs into a shallow dish and the breadcrumbs in another shallow dish. I like to use pie dishes for this.
Dip the flounder into the eggs and flip to have both sides covered in egg.
Now take the flounder and dip both sides into the breadcrumbs. Make sure that it is coated well. Repeat these steps with the rest of your flounder fillets.
Line a cookie sheet with parchment paper and spray it with olive oil cooking spray.
Placed the breaded flounder fillets onto the cookie sheet.
Lightly spray the tops of the breaded flounder fillets with olive oil cooking spray.
Place a slice of lemon on top of each flounder fillet.
Bake at 350 for 15 minutes, until nice and golden. Garnish with fresh parsley.
Such a light and healthy meal! I love lemon with seafood and always squeeze an extra wedge of lemon onto mine.
If you are out of bread crumbs, don't forget how easy it is to make them yourselves with this simple recipe! Homemade breadcrumbs are so much better!! Especially with these light and fresh flavors!
