Baked Ranch Breaded Pork Chops

This simple dinner is one of my family's favorite! Who doesn't love a breaded pork chop? And one flavored with ranch seasoning? Yum! The best part is that this recipe is baked so it is an easy and healthy dinner! And it only has a few simple ingredients!


When I go to the store, I am still in shock with how much the prices of meat have gone up. Especially the prices of beef and pork. Having three hungry and growing teenage boys, I am always trying to find a way to stretch the meat and my wallet. I have found that if I pound and tenderize my pork chops, I can turn 3 pork chops into 6 portions. And they are a good size portion too! Plus pounding the pork takes away any toughness and makes it super tender. Try it! It is saving me a lot of money! And my boys love it!


Baked Ranch Breaded Pork Chops

Ingredients:

3 (1 inch) boneless pork chops

16 oz. container of sour cream

1 oz. packet of dry ranch dressing seasoning

4 cups corn flakes

Pepper

Olive oil spray


  1. Preheat oven to 350 degrees.

  2. One by one, place the pork chop into a large Ziploc bag. Take a meat mallet to pound the pork chops into a 1/2 inch piece. Repeat with all 3 pork chops.

  3. Cut the pork chops in half so that you now have 6 portions.

  4. Mix together the sour cream and ranch seasoning packet. Put about 1 1/2 cups into a bowl and use that for this recipe. Then you can save the rest for veggies and dip.

  5. Brush both sides of the pork chops with the ranch sour cream.

  6. Season both sides with pepper.

  7. Crush the cereal in a bag until small crumbs are formed. If you don't have Corn Flakes, you can use Rice Crispies or Special K. All work great!

  8. Place the cereal crumbs into a pie dish.

  9. Now dip both sides of the coated pork chops into the cereal crumbs. Making sure that all sides are beaded well.

  10. Spray a parchment paper lined cookie sheet with cooking spray.

  11. Place the breaded pork chops onto the prepared cookie sheet and spray the tops with more olive oil spray.

  12. Bake at 350 degrees for 25 to 30 minutes, until nice and golden.
