This quarantine situation has made this a different kind of summer. We miss the beach so much! And we really miss fishing in the bay where we are always trying to catch flounder. It is our favorite fish to eat as it is so light and mild. Now I always keep wild frozen flounder fillets in my freezer. It is the perfect meal to make when you are short on time because it defrosts and cooks so fast. This Breaded Lemon Flounder recipe is our favorite way to eat it! Even those who aren't huge fish fans love this recipe!
Breaded Lemon Flounder
Ingredients:
6 flounder fillets
2 eggs, beaten
Kosher salt
Pepper
Garlic powder
2 cups breadcrumbs
Olive oil cooking spray
Lemon, sliced
1/4 cup parsley, chopped
Preheat the oven to 350 degrees.
Pat the flounder fillets dry with a paper towel.
Season both sides of the fillets lightly with salt, pepper and garlic powder.
Put the beaten eggs into a shallow dish and the breadcrumbs in another shallow dish. I like to use pie dishes for this.
Dip the flounder into the eggs and flip to have both sides covered in egg.
Now take the flounder and dip both sides into the breadcrumbs. Make sure that it is coated well. Repeat these steps with the rest of ypur flounder fillets.
Line a cookie sheet with parchment paper and spray it with olive oil cooking spray.
Placed the breaded flounder fillets onto the cookie sheet.
Lightly spray the tops of the breaded flounder fillets with olive oil cooking spray.
Place a slice of lemon on top of each flounder fillet.
Bake at 350 for 15 minutes, until nice and golden. Garnish with fresh parsley.
Such a light and healthy meal for your summer nights! I love lemon with seafood and always squeeze an extra wedge of lemon onto mine.
