Caprese Chicken with Prosciutto

I have been weeding all day and really just wanted a fresh, healthy and quick dinner. Caprese Chicken with Prosciutto is perfect for that! Balsamic chicken with prosciutto, tomatoes, mozzarella and basil!! What perfect summertime flavors that go so well together! It takes minutes to put it together and you can sit back and enjoy a glass of wine while it bakes in the oven. What could be better than that?


Caprese Chicken with Prosciutto

Ingredients:

4 boneless chicken breasts, cut in half lengthwise

1 cup balsamic vinaigrette (please see recipe below or use store bought)

Salt and pepper to taste

1/4 cup pesto

2 to 3 tomatoes, sliced

4 oz. Prosciutto, sliced thinly

8 oz. Mozzarella cheese, sliced

Fresh basil, chopped

Balsamic Glaze

Optional garnish: fresh diced tomatoes


  1. Place the chicken in a large ziploc bag and pour the balsamic vinaigrette over top. Seal the bag and let it marinade for at least an hour or up to 24 hours.

  2. Line a sheet pan with foil or parchment paper.

  3. Take the marinated chicken breasts out of the Ziploc bag and place them on to the prepared cookie sheet.

  4. Season lightly with salt and pepper, to taste.

  5. Take a basting brush and spread a layer of pesto onto each piece of chicken.

  6. Next place a piece of prosciutto onto each piece of chicken.

  7. Place the tomato slices on top of the prosciutto.

  8. Lastly, place the mozzarella slices on top of the tomatoes.

  9. Bake at 350 degrees for about 30 to 35 minutes, depending on the thickness of your chicken.

  10. Top each piece with some balsamic glaze, fresh diced tomatoes and chopped basil.
