Cheesy Parmesan Artichoke Toasts

I love appetizers and I love party foods! This appetizer is always the hit of a party. The hot and cheesy artichokes are delicious on this crispy toast. And they look so elegant! The best part is that these are so easy to make. I try to always have a can of artichoke hearts in my pantry just for this tasty appetizer - because I crave it a lot! You will too!


Cheesy Parmesan Artichoke Toasts

Ingredients:

1 (14 oz.) can or jar of artichoke hearts, drained and diced

1 garlic clove, finely minced

2 green onions, finely chopped

1/2 cup of mayonnaise

1 cup of Parmesan cheese (you want the green plastic can of parm for this one - like Kraft or Aldi)

Paprika

8 slices of bread, with the crusts cut off


  1. Add the artichoke hearts, garlic and green onions to a bowl and stir until they are combined.

  2. Add the mayonnaise and Parmesan cheese to the bowl and stir well.

  3. Spread a layer of the artichoke mixture onto a piece of bread.

  4. Cut the bread into quarters so that you have four triangles or squares.

  5. Place them onto a parchment lined sheet pan.

  6. Repeat until all are completed and on the sheet pan.

  7. Sprinkle the tops with paprika.

  8. Bake at 375 degrees for about 22 to 25 minutes. Until they are bubbly and golden.










Since we aren't "partying" much this past year, I still make this and serve these with a salad for lunch and dinner.


And do not throw those bread crusts out! Instead make these homemade croutons for your salad. Here is the recipe...
