The air is super crisp today and it is beginning to feel like fall. It is almost soup and crock pot season but I am hanging onto summer for a little longer. I love this time of the year but know that I need to preserve some fresh summer tastes to enjoy this winter.
Since the peaches have been so incredible this year, I decided to buy 4 pounds of peaches to make lots of my easy homemade peach jam. It is one of my favorites and there are so many ways to use it. Plus this recipe is so simple to make! And I love that it doesn't have a ton of sugar , like store bought jams. You will love it! It is a great way to be able to have the fresh taste of summer peaches year round!
Easy Homemade Peach Jam
(Makes 3 half pint jars)
Ingredients:
5 cups of peaches, diced finely (about 6 to 8 peaches)
5 tbsp sugar
Juice of one lemon
Put the diced peaches into a saucepan.
Add the sugar and lemon juice and stir.
Cook on medium high until it comes to a boil.
Lower the heat to medium and simmer for about 20 to 25 minutes. Stirring frequently. You will know when it is done when the peaches have softened and the liquid gets thicker and syrupy.
Remove from heat.
Funnel into jars, put the lids on and follow these canning instructions...
How to can jam...
Please note that my peaches had a very thin skin so I left my skins on and just diced them up. If your peaches have a thick and fuzzy skin, you can remove the skin by boiling the whole peach in a pot of boiling water for 45 seconds. Then the peach skin will easily peel off.
I made three batches of Peach Jam today! I love to use in in so many recipes and want to be sure that I have plenty to last me through the winter. Plus this jam is a great gift to share with friends too!
