Tomato and Cucumber Crostini with Herb Cheese

It is that time of the year - when the cucumbers and tomatoes are plentiful and at their finest! This is one of my favorite appetizers to make on a hot summer night! The cool, crisp cucumbers and juicy tomatoes are amazing on top of an herb cheese crostini! The combination just tastes like summertime! This is a perfect light and refreshing summertime appetizer that you will love!


Tomato and Cucumber Crostini with Herb Cheese

Ingredients:

English cucumber, sliced

1 pint grape tomatoes, halved

8 oz. cream cheese, softened

3 tbsp mayonnaise

1 (7oz.) packet of dry Italian dressing seasoning mix

2 tsp fresh chives, chopped

Crostini (please see link below for recipe)


  1. Place the sliced cucumbers on a paper towel lined plate and top the cucumbers with another paper towel. This takes the excess moisture out of them and keeps them supper crisp.

  2. Place the halved tomatoes face down on a paper towel lined plate to draw out the excess moisture.

  3. In a mixer, mix together the cream cheese, mayonnaise and the Italian seasoning packet.

  4. Stir in the fresh chives.

  5. Line a platter with your crostini.

  6. Spread a layer of the herb cheese onto the crostini.

  7. Top the herb cheese crostini with a cucumber slice.

  8. Add a dollop of the herb cheese to the tomato half and place it, cheese side down, on top of the cucumber.


Serve this appetizer nice and chilled.
